Indian Dessert Recipes - Shahi Tukra (Bread Pudding)

Ingredients :

Bread Slices - 8
Milk - 400 ml
Sugar - 150 gms
Crushed cardamom - 1 tsp
Condensed milk - 100 ml
Fried Cashewnuts - 15 gms
Fried sliced Pista - 15 gms
Fried sliced Badam
Khoya (sweet) - optional - 50 gms
Vegetable oil for frying

Method :

1. Remove the crust of the bread and cut into triangles. Deep fry in vegetable oil.

2. Boil milk till it reduces to half and add sugar and crushed cardamom. Add khoya(optional). Simmer for 10 minutes. Remove from fire.

3. Add condensed milk to this boiled milk and mix well.

4. Arrange the fried bread slices on a tray.

5. Pour the prepared milk over the bread slices and garnish with the chopped and fried nuts.

6. Refrigerate for an hour and serve cold (optional).

7. Place in a preheated oven for 3 minutes and serve hot (optional).

Indian Festival Recipes - Rice Payasam

Ingredients :

Basmati Rice & chopped almonds - 4 tsp,
Milk - 2 cups,
Coconut Extract - 1 cup,
Evaporated Milk - 1 tin,
Sugar - 1&1/2 cups,
Cardamom Powder - 1/4 tsp

Method :

1. Soak rice for 15 minutes.
2. Allow the milk and coconut extract to boil, add the soaked rice and cook.
3. After it is cooked, add sugar, cardamom powder and almonds and let it boil for 5 minutes.
4. Add the evaporated milk and let it boil.

Indian Festival Recipes - Rava Pongal

Ingredients :

Rava 1 cup
Moong Dal 1/2 cup
Cashew Nuts 10 no
Ghee 4 tbs
Curry Leaves
Chopped Ginger 1 tsp
Blackpeppercorn 1 tsp
Cumin Seeds 1 tsp
Salt to taste

Method :

1. Fry the rava without any oil till it is really hot to touch.

2. Fry the black pepper and cumin seeds in a teaspoon of ghee and make a coarse powder of them.

3. Fry the cashewnuts, curryleaves, chopped ginger and keep aside.

4. Pressure cook the moong dal with 1 cup of water.

5. After the pressure subsides transfer the cooked dal to a heavy bottomed pan and add a cup of water.

6. Add the required salt.

7. Allow this to boil well.

8. Add the fried rava to the above boiling (cooked) moong dhal in small measures and stir continuously till the rava is cooked completely.

9. While the rava is being cooked add the ghee little by little.

10. Finally, add the coarsely powdered pepper and jeera and the fried cashewnuts, curry leaves and chopped ginger.

11. If you want a spicy rava pongal you can also use a teaspoon of chopped green chilly.

12. This goes well with coconut chutney.

Indian Festival Recipes - Til Burfi Recipe

Ingredients:

1 cup Til (sesame seed)
1 can Condensed Milk
1/2 stick Butter
1 cup Milk Powder
1 cup Jaggery

How to make Til Burfi:

1. Roast the sesame seeds in a dry skillet.
2. Grind them coarsely in a blender.
3. Now heat the jaggery in a thick bottomed vessel till it melts completely.
4. Mix all the ingredients along with grounded sesame seeds in a glass dish.
5. Microwave the mixture for about 3 minutes.
6. Grease a tray with butter and leave aside.
7. Stir the mixture properly and microwave again for 3 minutes.
8. Remove it when bubbling starts.
9. Stir till it becomes thick.
10. Spread the mixture on greased tray.
11. Cut in squares when cool.
12. Til Burfi is ready.

Indian Non-Vegetarian Starter Recipes - Chicken Chips

Ingredients:

2 cups boneless chicken
salt and pepper to taste
1/2 cup corn flour
1 cup sooji
oil for frying

Method:

1. Shred the chicken into small bitable pieces. Apply salt, pepper and a little vinegar.
2. Leave it aside for 15 minutes.
3. Cook till done without adding water.
4. Add a cup of water to the corn flour and make into a thin batter.
5. Dip the chicken pieces in the batter and roll over in the sooji.
6. Deep fry and drain on a tissue or a kitchen towel.

Note:

This dish can also be made from the leftover chicken from the frys and grilled ones.
The only point is that it should be dry.

Indian Salad Recipes - Chicken Apple Salad

Cooking time: 10 minutes (excluding chicken cooking time)

Serves: 4

Ingredients:

2 cups cooked chicken pieces
2 cups torn lettuce leaves
2 cups apple, peeled and cubed
1/2 cup halved fresh strawberries
1/2 cup cubed cheddar cheese
2 tbsp raisins

For Dressing:

1/4 cup salad oil
1/4 cup apple cider vinegar
3 tbsp sugar
1/8 tbsp cinnamon powder
(Mix it well)

Method:

1. Mix all the ingredients of salad except raisins
2. Before serving pour the dressing
3. Toss it well
4. Garnish with raisins
5. Serve immediately
