Indian Vegetarian Dishes - Paneer Pasanda




PANEER PASANDA RECIPE


Ingredients :

500 gms Cottage Cheese (Paneer) How to make paneer
6 Onion (Pyaj) 
400 gms Tomato (Tamatar) 
1 " long piece Ginger (Adrak) 
2 Green Chilly (Hari Mirch) 
1 cup Cream (Malai) 
1 cup Curd (Dahi) 
100 Butter
1 tsp Red Chili Powder (Lal Mirchi) 
1/4 tsp Turmeric (Haldi) 
1 tsp Dried Pudina Leaves
1/2 tsp Garam Masala 
1/2 cup Milk 

Method :

Cut cottage cheese in samll pieces.
Chop onion very finely.
Grind tomato, ginger, green chilly,.
Heat butter in a pan.
Saute onions till pink in color.
Then add tomato paste.
Continue cooking it on medium flame till ghee/oil begins to separate.
Put off the flame.
Add cottage cheese, cream , curd, salt, red chili powder, turmeric, garam masala, dried pudina leaves and mix well.
Keep it aside for an hour.
Put the pan on the flame and then add milk to the mixture.
Simmer for 5 minutes and then finally put off the gas.
Take off the fire and serve hot.

Indian Breakfast Recipe - Paneer Dosa Recipe

Paneer Dosa Recipe


Ingredients :

3 cup rice (chawal)
1 cup split black gram lentil (urad ki dhuli dal) 
1 tsp fenugreek seeds (dana methi) 
400 gm potato(alu) 
2 large sized onion (pyaj) 
150 gm cottage cheese (paneer) 
3 green chilly (hari mirch) 
1 tsp mustard seeds (rai) 
1/4 tsp turmeric powder (haldi) 
10-12 curry leaves (kadi patta) 
oil as required
1 1/2 tsp salt (namak) 


Method :

Soak rice, dal and dana methi for 6 hours.
Then grind them to a fine thin batter by adding little water.
Add salt to it and leave it covered for 12 hours for fermentation.
Peel potato and cut into small pieces.
Chop onion also into long pieces.
Grate paneer.
Finely chop hari mirch also.
Heat 2 tbsp oil in a pan and crackle rai and curry leaves.
Then fry onion in it until it turns light brown.
Now put alu, hari mirch and paneer and mix well.
Now put 1/2 tsp salt, lal mirch and haldi in it.
Fry for 2 minutes and remove it from the flame. Keep it aside for stuffing.
Now heat a non stick tawa and spread 1 tbsp of the batter on the whole of the pan.
When cooked spread paneer mixture on it.
Grease all the corners with oil.
Roll and remove it from the gas.
Put little water on the tawa and wipe it with a clean cloth before making each dosa.
Serve them hot with hot sambhar and chutney.

Indian Paneer Recipes - Panner Koftas

Preparation Time : 15 minutes
Cooking time : 20 minutes
Serves : 4

Ingredients :

For the Koftas :

300 gm Paneer (Cootage Cheese)
1/2 tsp Salt
1/2 tsp Red Chilli Powder
1/2 tsp Garam Masala
1 tsp Amchoor (dried raw mango) Powder
1 tbsp Besan (Gram Flour)
Oil for deep frying

For the Filling :

1 medium Onion, chopped
3 green chillies, deseeded and chopped
25-30 Kishmish (sultanas), washed with warm water

For the Batter :

1/2 cup Besan (gram flour)
1/2 tsp Salt

For the Gravy :

1/2 tsp black mustered seeds
3 Whole dry red chillies
8-10 curry leaves
1 tsp turmeric powder
1/2 tsp red chilli powder
1/2 tsp Salt
1 cup Yoghurt, well beaten
4 tbsp Oil.

Method :

1. For the Koftas : mash the paneer until absolutely smooth, add all the dry ingredients for the koftas and mix well.

2. For the Filling : Stir all the ingredients for the filling together in a separate bowl.

3. Divide the Paneer mixture and the filling mixture into equal portions. Put one portion of the filling into one portion of panner and make into a ball about the size of a walnut.

4. For the Batter : Add enough water to the gram flour to make a smooth batter and mix well.

5. Coat each paneer ball with the batter and deep fry until golden brown. Keep aside until required.

6. For the Gravy : Heat the oil in a pan, Add the whole dry red chillies, Curry leaves & black mustered seeds. fry until the black mustered seeds starts spluttering, remove from the heat, add the remaining spices, stir and return to a low heat.

7. Stir in the beaten yoghurt and 1/2 cup water and simmer for 5-7 minutes

8. Add the prepared koftas and salt just before serving.

9. Serve sprinkled with fresh green coriander.

Indian Paneer Recipes - Shahi Paneer

Makes for: 6
Making time: 45 minutes.

Ingredients:

250 gms. paneer (cottge cheese)
3 tbsp. ghee or butter
1 onion chopped into strips
1/2" piece ginger chopped fine
2 green chillies chopped fine
4 tomatoes chopped fine
2 cardamoms crushed
1/4 cup beaten curd
1/2 tsp. red chilli powder
1/2 tsp. garam masala
salt to taste
1/2 cup milk
2 tbsp. tomato sauce

To garnish:

2 tbsp. grated paneer
1 tbsp. chopped coriander

Method:

1. Chop the paneer into 2" fingers.
2. Heat half the ghee. Add onion,ginger, green chilli and cardamom. Fry for 3-4 minutes.
3. Add tomatoes and cook for 7-8 minutes, covered.
4. Add curd and cook for 5 minutes.
5. Add 1/2 cup water and cool.
6. Blend in a mixie till smooth.
7. Heat remaining ghee, add gravy and other ingredients except milk and paneer.
8. Boil to get a very thick gravy.
9. Just before serving, heat gravy, add milk and paneer fingers and boil for 3-4 minutes.
10. Garnish with chopped coriander and grated paneer.

Indian Paneer Recipes - Paneer Taash Kabab

Paneer Taash Kabab

Ingredients:

1 tblsp Fresh Cream
8 Cheese sliced
1 cup Cheese grated
1/2 tsp Peppercorns crushed
2 medium sized Tomatoes sliced
8 tblsp Mint Chutney
2 medium sized Onions sliced
400 gms Cottage Cheese
For Marinade
Chaat Masala to taste
1/3 cup Hung Yogurt
2 tblsp Mustard Oil
4 tsp Ginger Garlic Paste
1 tsp Garam Masala Powder
1 tsp Coriander Powder
1 tsp Cumin Powder
2 tsp Red Chilli Powder
Salt to taste

How to make paneer taash kabab :

1. Slice paneer into seven pieces.
2. Mix well all the marinade ingredients and spread evenly on the cut paneer.
3. Keep aside for 10 minutes.
4. Spread mint chutney evenly on the cut paneer.
5. Assemble cut onions and tomatoes on each cut paneer and cover with the cut cheese.
6. Stack each layer of cut paneer one on top of the other, by repeating the process.
7. Make a mixture of cream and crushed black pepper and pour out over the top layer.
8. Put the last cheese slice on top, bake at moderate temperature for 10 minutes in the oven.
9. Cut into desired equal sizes.
